Acetaia Leonardi Saba Balsamic Vinegar 500ml – Traditional Italian Grape Must

Acetaia Leonardi Saba is a rare and traditional Italian grape must reduction, crafted from carefully selected Trebbiano and Lambrusco grapes grown in the family’s 7 hectares surrounding their historic acetaia in Modena.

After harvest, the grapes are gently crushed and the juice and pulp are coarsely filtered to obtain the mosto (fresh grape must). This must is then slowly cooked (mosto cotto) in open copper cauldrons for over 24 hours at low heat, gradually reducing it to approximately one-third of its original volume. This slow reduction concentrates the natural sugars and intensifies the fruit character of the grapes.

While most of the cooked must is transferred into traditional batteria barrels to begin its long transformation into balsamic vinegar, a special selection is reserved for Saba. This portion is aged separately in large oak casks for around four years, developing a rich, velvety texture and layered complexity—without undergoing acetification into vinegar.

The result is a naturally sweet, syrupy elixir that expresses the pure essence of Trebbiano and Lambrusco grapes. Saba reveals deep notes of ripe fruit, raisins, and subtle caramelized sweetness, balanced by a gentle, natural acidity.
